Cajun Pork Roast

  • 3 lbs loin rib end roast rack (about 6 ribs)
  • 3 tbsp paprika
  • 1 tbsp garlic powder
  • 2 tsp dried oregano
  • 2 tsp thyme
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp cumin
  • 1/2 tsp cayenne
  • 1/4 tsp nutmeg

  • 3 lbs loin rib end roast rack (about 6 ribs)
  • 3 tbsp paprika
  • 1 tbsp garlic powder
  • 2 tsp dried oregano
  • 2 tsp thyme
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp cumin
  • 1/2 tsp cayenne
  • 1/4 tsp nutmeg
Instructions
  1. Place pork roast in a shallow pan. Combine all seasonings and rub well over all surfaces of roast.*
  2. Roast pork at 325º for about 11/2 to 13/4 hours or until meat thermometer registers 160º. Remove from oven, cover with foil and let stand 5 to 10 minutes before slicing.
  3. Serve with corn flecked with chopped red and green peppers and okra.
Recipe Notes

*For more intense flavour, place pork roast in a shallow dish, rub with seasonings, cover and refrigerate several hours or overnight.
