Feel free to try anything that strikes your fancy: a sprinkle of cayenne pepper, homemade chutney, a little balsamic vinegar. Taste as you go and be a bit cautious.
Place ribs, carrots, celery and peppercorns in pot, or two pots if necessary. Add water to cover and bring to boil. Cover and reduce heat, simmer. 20 to 30 minutes for prime ribs. 11/2 to 2 hours for short ribs and braising ribs. Or until tender.
Sauté onions, garlic and chili peppers (if using) in oil in sauce pan until onions are softened but not brown. Add remaining ingredients. Bring to a boil, stir often. Reduce heat and simmer uncovered 20 minutes.
