Beer Barbecue Sauce and Ribs

Ingredients
  • 1 rack of ribs
  • 2 carrots chopped
  • 1 or 2 stick of celery with leaves, chopped
  • 6 black peppercorns
  • Beer Barbecue Sauce
  • 2 tbsp oil
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 tsp hot chili pepper fresh, or 1/4Tabasco sauce (optional)
  • 12 oz bottle of beer
  • 3/4 cup ketchup
  • 1/4 cup cider vinegar
  • 1/4 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp chili powder less if you don’t like it hot

  • 3/4 cup ketchup
  • 1/4 cup cider vinegar
  • 1/4 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp chili powder less if you don’t like it hot
Instructions
  1. Feel free to try anything that strikes your fancy: a sprinkle of cayenne pepper, homemade chutney, a little balsamic vinegar. Taste as you go and be a bit cautious.
  2. Ribs
  3. Place ribs, carrots, celery and peppercorns in pot, or two pots if necessary. Add water to cover and bring to boil. Cover and reduce heat, simmer. 20 to 30 minutes for prime ribs. 11/2 to 2 hours for short ribs and braising ribs. Or until tender.
  4. Barbecue Sauce
  5. Sauté onions, garlic and chili peppers (if using) in oil in sauce pan until onions are softened but not brown. Add remaining ingredients. Bring to a boil, stir often. Reduce heat and simmer uncovered 20 minutes.
