Smokey Caribbean Roasted Potatoes

  • Potatoes as many as you need, peeled or unpeeled.
  • Wash and pat dry the potatoes.
  • Drizzle olive oil over the potatoes.
  • Liberally sprinkle with your favourite smokey Caribbean rub.

Instructions
  1. Place mixture in a baking tray. Bake at 350º for about 40 minutes. Toss roasted potatoes into a bowl. Sprinkle with chopped fresh parsley.
